May Foodie Penpals

It’s that time of the month again – Foodie Penpals Reveal Day!!!

This month I was paired up with Lauren the sweetheart behind LivingLocally.  One of my “requests” was for local NYC treats.  I spent about two days in New York before my cruise last August, but it hardly felt like enough time to experience all the tasty treats the city has to offer.

Lauren obliged me with some chocolate peanut clusters and a chocolate covered graham cracker from Li-Lac.  Let me tell you; the chocolate from Li-Lac lasted about 60 seconds after I opened the box.  I actually didn’t even get them in the picture…only the wrapper.

The second item to disappear quickly were the seaweed snacks.  Lauren told me lived in Japan for a while and these were her favor snacks while she was there.  I actually tried the Trader Joe’s seaweed snacks about a year ago.  I wasn’t sure I loved them, but I definitely didn’t hate them.  This time around, I’m definitely sold.

The other items in my box were ingredients for a recipe she included: soba noodles with walnuts and kale.  I was actually super excited to get the soba noodles.  I’ve actually never had soba noodles before, but last month, I was looking for soba noodles to send to my penpal and came up empty-handed.  Of course since I couldn’t find them, I immediately needed to try them!  I haven’t made them yet since I a) haven’t been cooking a ton lately, and b) I need to either find a different recipe or wait until I’m making a meal that Nik isn’t eating since he hates nuts.  I am extremely excited to use them though!

All in all it was another awesome month for me!  Are you interested in participating yourself? Check of the details below:

Weight Watchers Wednesday: 5/29/12

So I missed my meeting/ weigh in last week because of our mini-vacation to Cedar Point/ Michigan so no post last week.

Last week: 157.8lbs
This week: 160.8lbs
Change: + 3lbs

So, I was really, really unhappy with last night’s weigh in.  Now, I think the three-pound gain can probably be chalked up to water weight from the weekends in Michigan, but honestly, that doesn’t make much of a difference to me right now.  As I was inputting my weight, I realized I’m a mere four pounds from where I started a year ago.  I’m also ten pounds up from my lowest back in February.  It’s hard to nail down my exact emotions with regard to this realization.  I’m not angry – though maybe I should be.  I’m not disappointed – though, again, maybe I should be.  I’m not even really upset about it.  More than anything it’s eye-opening and motivating.  It’s proof that I’ve been slacking, and that is unacceptable.  It’s a kick in the ass to get my shit together again. This week

I’ve set some very basic and hardline goals.

  1. Track 7/7 days
  2. Eat at least 5 servings of fruits and veggies daily
  3. Three workouts (Today, Saturday and Monday)
  4. Drink at least 100 oz of water daily.

If I achieve all 4 goals, at 100% success, I’m going to buy a copy of The Bloggess new book Let’s Pretend this Never Happened.  I have a hard time finding rewards that I want enough to really motivate my self-discipline, but I REALLY want this book.

That’s it for this week.  Short and sweet.  See you next Wednesday!

Where I’ve Been…

It’s been pretty quite around here lately.  That’s because I’m doing a ton of behind the blog work, and there are big things coming to Running In Chucks.  I’ve also been spending a lot of time unplugging on the weekends.  Here’s a small glimpse of what I’ve been up to lately.

I took a trip to Cedar Point with friends.  We rode all of the roller coasters and barely waited in line.  It was awesome.

Coffee and my Kindle on the lake.  I managed to ready 2.5 books over Memorial Day weekend.

Maxwell chilling out on the boat.

I saw The Cranberries in concert with my friend Val.

I’ve been ramping up my bags skills lately.  I’m still pretty horrible, but I can sometimes actually score points now!

I’ve been cooking more.  This is a cherry barley pudding (like rice pudding) I made.  It needs some tweaking before I share, but that’s a convenient excuse to make more.
